Do you need to whip up a filling meal for a large family? Do you want a meal that is just as delicious as leftovers as it is freshly cooked? Then Turkey, Ham, and Bean Skillet Extraordinaire is for you! And yes, that’s a mouthful of a recipe title, so we call it THB for short.
THB Skillet Extraordinaire is adapted from Taste of Home’s Skillet Cassoulet Recipe. The main differences include changing up the amounts of nearly every ingredient, using fire-roasted tomatoes instead of regular diced tomatoes, adding in pinto beans, and serving over rice. My recipe has four cans of beans compared to the original recipe’s single can, which helps to bulk up the recipe for little added cost.
Recipe Overview
If serving over rice, cook rice according to package directions. Heat a large skillet over medium-high heat with non stick spray. Add turkey sausage, ham, carrots, onion, and celery. Add garlic. Add tomatoes, cannellini beans, light red kidney beans, and thyme. Serve over rice.
How to Freeze and Reheat
THB refrigerates and freezes well. To freeze, allow to cool then transfer to a freezer safe container. To reheat, it is best to thaw in the refrigerator overnight. I prefer to reheat in a saucepot on medium heat until bubbling, about 10-15 minutes. However, you can also microwave until hot.
If you forget to thaw it, run the container under hot water in order to get the frozen block out of the container. Then, reheat in a covered saucepot over medium heat. Stir every few minutes so that you slowly work your way toward the middle as the outer layers warm and separate from the frozen block.
We always make fresh rice with leftovers.
This is a great meal to make for a meal train because your friends or loved ones can thaw the frozen THB when they need it. Pair it with microwaveable rice packets to further make their meal a breeze!

Tip #1: Use a large skillet
This meal makes six servings, and it will fill a large skillet to the brim. If you do not have a large skillet, then I would recommend cutting the recipe in half.

Ingredients
- 3 cup Uncooked Jasmine Rice
- 6.5 oz Smoked Turkey Sausage, chopped (~1.5 cups)
- 5 oz Diced Ham (~1 cup)
- 5 oz Shredded Carrots (~1.5 cups)
- 7 oz Red Onion, chopped (~1.5 cups)
- 6 oz Celery, diced (~1.5 cups)
- 3 clove Garlic (minced)
- 2 cans Cannellini Beans (1 can = 15.5 oz) (drained and rinsed)
- 2 cans Light Red Kidney Beans (1 can = 15.5 oz) (drained and rinsed)
- 2 cans Fire Roasted Diced Tomatoes (1 can = 14.5 oz) (undrained)
- 2 tsp Dried Thyme Seasoning
Instructions
- Cook rice according to package directions.
- Heat a large skillet over medium-high heat. Spray with cooking spray or add 1-2 tsp of olive oil. Add turkey sausage, ham, carrots, onion, and celery. Cook until vegetables begin to soften.
- Add garlic and cook for 1-2 more minutes.
- Add tomatoes, cannellini beans, light red kidney beans, and thyme. Stir until bubbling. Serve over rice.
