The humble meatloaf. Usually meatloaf is a simple dish to prepare, and this recipe is no different. At four steps, it really can’t get too much simpler! It only takes 10 minutes to prepare the loaf, but it does require roughly 70 minutes to bake and then another 10 minutes to rest.
This recipe is only slightly adapted from Ellie Krieger. I use more oats and more red bell pepper, and I don’t bother to beat the eggs before mixing them into the turkey.
Recipe Overview
Let the oaks and milk soak together, then mix all ingredients (except tomato sauce) in large bowl. Form into a loaf and top with tomato sauce, then bake.
How to Freeze and Reheat
This recipe is great because the leftovers easily freeze for a quick meal at a later time. To freeze, place into an air tight container. (You can freeze in one large loaf or in slices.) Place container into the refrigerator 1-2 days before you need it in order to thaw. To reheat, cut into slices or cut into bite size pieces and microwave for 1-2 minutes until hot.

Tip #1: Mix the meat the day before
Tasty Turkey Meatloaf with Red Bell Pepper is delicious, but it takes just over an hour to bake. If you want to save a teensy bit of time the day of cooking, you can prepare the meat mixture the night before and store in the refrigerator, covered, until ready to bake. Prepping the day before only saves about ten minutes, but our family routinely does this just to help make dinner a tad bit easier the next day.
The liquid from the various ingredients may seep out so that you have a puddle in the bottom of your bowl. Just stir the mixture a few times in order to get most of the liquid reabsorbed, then you can form your loaf and bake.
Tip #2: Use a large dish to cut baking time
The recipe calls for a 9×13 pan, and it usually takes about 70 minutes for the meatloaf to bake. If you instead form a wider, longer, and shorter loaf in a larger plan (more surface area for heat transfer), it will take some of the baking time off. For example, the meatloaf is almost always fully cooked after 60 minutes rather than 70 minutes when baking a wider/longer/shorter loaf in a 10×15 plan compared to taller, skinnier loaf in the 9×13 pan.

Tasty Turkey Meatloaf with Red Bell Pepper
Ingredients
- 1 cup Quick Cooking Oats
- ½ cup Milk
- 32 oz Ground Turkey
- 1 medium Onion (~8 oz = 2 cups)
- 1 large Red Bell Pepper (~8 oz = 1½ cups)
- 2 Eggs
- 2 tsp Worcestershire Sauce
- ¼ cup Ketchup
- ½ tsp Salt
- ⅛ tsp Black Pepper
- 8 oz Tomato Sauce
Instructions
- Preheat oven to 400 °F.
- Mix together oats and milk and let soak for 2-3 minutes. Combine turkey, onion, red bell pepper, eggs, Worcestershire sauce, ketchup, salt, and pepper, then add the oats and milk. Mix well using hands or a large spoon.
- In a 9×13 pan, form the mixture into a loaf about 6 inches wide and 10 inches long. Spread tomato sauce over the top of the load and the sides. Bake for 70 minutes or until center reaches 165 °F.
- Remove from oven and let rest for 10 minutes.
