A great bruschetta is one of my most favorite things. It’s typically served as an appetizer, but I’ll eat it as lunch because why should you ever limit yourself on something this tasty? Roma tomatoes, olive oil, garlic, fresh basil, and balsamic vinegar on toast. Delicious. Add in some mozzarella cheese? Downright delectable.

How to Serve

You can serve Best Tomato Bruschetta however you prefer. Pop it in the refrigerator to chill it, heat it up (microwave or oven) to serve warm, or serve it at room temperature after preparing. They’re all great! Personally, I prefer to serve it room temperature or warm.

Depending on the setting, I’ll serve this as a prepared hors d’oeuvres or as a “serve yourself” toast & dip (so that folks can create their own bruschetta).

Recipe Overview

Dice the tomatoes and then drain the juice and seeds. Cut the fresh basil into ribbons. Mix everything (diced tomatoes, basil ribbons, balsamic, garlic, olive oil). Allow to marinate for at least 20 minutes. Slice the bread into thin slices, then toast. Serve how you like: warm, room temperature, or cold, and as a prepared hors d’oeuvres or as a dip.

How to Store

This is best served fresh, but I will refrigerate the leftover tomato mixture for a few days and re-heat before serving. If eating leftovers, I will toast the bread fresh.

FAQs & Tips

Question #1: Do I need to drain and de-seed the tomatoes?

You do not need to drain and de-seed the tomatoes, but I believe that helps the olive oil and balsamic vinegar shine. I use the basket of a salad spinner for this task because the larger, wider gaps help the seeds fall out easier than a traditional colander.

Question #2: Do I need balsamic vinegar and balsamic glaze?

The balsamic glaze gives a flavor boost which is why I prefer to use it. Balsamic glaze isn’t a grocery store staple, but I have found it at most stores.

Ingredients

  • 8-10 Roma Tomatoes (~26 oz)
  • 2 clove Garlic (minced)
  • 2 tbsp Olive Oil
  • 3 tbsp Balsamic Vinegar
  • cup Fresh Basil (cut into ribbons)
  • ¾ cup Mozzarella Cheese (finely shredded)
  • 1 large Fresh Loaf of French Bread (14 oz)
  • 4 tbsp Balsamic Glaze

Instructions

  • Dice tomatoes. Drain the juice and seeds.
  • Add tomatoes, minced garlic, olive oil, balsamic vinegar, basil, and mozzarella cheese to a large bowl. Stir to blend well. Allow to sit for at least 20 minutes for flavors to develop. (If chilling or heating, that can be completed at this time.)
  • Slice the French Bread into ½ inch slices. Broil for 1-2 minutes per side to toast.
  • Spoon tomato mixture onto the toast and serve.
