Balsamic Chicken and Crackers is one of the easiest and fastest in the Rintz Recipe cookbook. Three ingredients, in under five minutes, come together for a quick appetizer or snack. Personally, I eat this as a small lunch when I can’t decide on (or don’t feel like making) anything else.

How was this recipe developed? By falling prey to those free and tasty Costco samples. 

My husband and I were shopping one day and enjoying the various samples. One of their stations was intending to sell canned chicken. To make it appetizing, they drizzled a small amount of balsamic glaze over it. Everyone says they enjoy the samples but won’t buy the product. Well, Costco knows what it’s doing with its marketing strategy, and we bought the chicken and the glaze.

To add texture to the dish, we serve the chicken over crackers. The crackers give the dish a nice crunch, a wider range of flavor, and an edible spoon!

What’s great about this recipe is that all of these ingredients are shelf stable. Keep them in your pantry so you have a small meal available at all times. For those in areas that stay prepared for power outages (hurricane season on the coasts or winter snow storms in the north), this is a great meal to keep stashed next to your canned beans and bottled water.

The recipe is simple: Drain the canned chicken and transfer to a bowl. Drizzle with balsamic glaze. Microwave until hot, about one minute. Spoon onto crackers.

Do I need to use balsamic glaze? Can I use balsamic vinegar instead?

Balsamic vinegar can be used, but the glaze is much thicker and leads to a much fuller taste.

Ingredients

  • 12.5 oz Canned Chicken
  • 1.5 tbsp Balsamic Glaze
  • 30 Crackers

Instructions

  • Drain canned chicken. Place in microwave safe bowl.
  • Drizzle with balsamic glaze. Use fork to lightly mash the chicken and stir in balsamic glaze.
  • Microwave for one minute until hot. Spoon onto crackers or serve as a dip.
